Our olive groves are home to 3 different varieties of olive; thus, we produce 3 single-variety types of extra virgin olive oil: Verdeña, Negral and Alquezrana. These are cold-extracted so that each type of oil can retain all its properties and flavour.
Additionally, we have a Premium oil – El Maestro de Bierge – which is an extra virgin olive oil produced from mid-October from very green olives. These olives produce a very intense oil, with a distinct aroma and highly persistent flavours – excellent when used raw.
All our extra virgin olive oils are either single-variety, Maestro de Bierge or a blend. This latter is a more balanced oil, produced throughout the campaign, and can be used both raw or in cooking.
